Ingredients


1 cup Cocoa powder, unsweetened
2 cup Cashew nuts, raw
3/4 cup hulled Sunflower seeds
1 tsp Salt
2 pod Vanilla bean (contents of pod scraped out)
1 tsp Cinnamon
1/2 cup Goji berries, dried (soaked in boiling water for 30mins)
1/2 cup pitted Dates
1/3 cup Brewed coffee (strong brew)
1/3 cup Almond flour/meal, Bob's Red Mill
1/4 cup Cacao nibs, raw
2 2/3 tbsp Coconut oil
2 2/3 tbsp Maple syrup

Instructions


Add all the dry ingredients into a food processor (except almond flour and cacao nibs). Starting on low and working up to a higher speed, process until mixture is fine.

Add the goji berries and blend. Once blended well, add dates and coffee. Blend well.

The mixture will be quite sticky. Line a brownie tin with waxed paper and press the mixture in as best you can.

Mix the coconut oil, maple syrup, cacao nibs and almond flour together and smother over the top of the fudge.

Cover and place tray in the freezer for 1-2 hours. Cut into squares or rectangles and keep in an airtight container in the freezer.
