Raw Mint Cashew Brownies

1/4 cup Cashew nuts, raw (soaked)
1 cup Rolled oats, dry
1 cup Medjool date (pitted)
2 tbsp Cacao powder, raw (or to taste)
2 tbsp Honey, raw (or to taste)
1 dash Peppermint extract
1/4 cup Cacao nibs, raw (or vegan chocolate chips)
1 dash Himalayan sea salt


1. Place everything in a food processor, and blend until thoroughly combined.

2. You will know that these are well blended when you can roll them into a ball without them falling apart. 

3. Place in a parchment lined loaf pan, and pack down tightly and evenly. 

4. Place in freezer and freezer 2-3 hours, or overnight. When they have frozen, remove, slice into bars, and store in fridge or freezer.
