1/2 cup whole Almonds, raw (crust)
3/4 cup Pecans (crust)
1/4 cup Coconut, shredded, unsweetened (crust)
1 cup Medjool date (crust - pits removed)
1 tbsp Coconut oil (crust)
1 pinch Sea Salt (crust)
1 1/2 cup Cashew nuts, raw (strawberry filling - soaked for 2-3 hours)
1/4 cup Honey (strawberry filling)
1/2 medium Lemon (strawberry filling - peeled and deseeded)
1/4 cup Coconut cream (strawberry filling - cream from top of coconut milk can)
1 tsp Vanilla extract, pure (strawberry filling)
2 tbsp Coconut oil (strawberry filling)
1 pinch Sea Salt (strawberry filling)
1 cup whole Strawberries (strawberry filling - fresh)
1 1/2 cup Cashew nuts, raw (mango layer - soaked for 2-3 hours)
1/4 cup Honey (mango layer)
1/2 medium Lemon (mango layer - peeled and deseeded)
1/4 cup Coconut cream (mango layer)
1 tsp Vanilla extract, pure (mango layer)
2 tbsp Coconut oil (mango layer)
1 pinch Sea Salt (mango layer)
1 1/2 cup Mango (mango layer)

Instructions


  1. Crust - In a food processor, process nuts together with dates, coconut, coconut oil and sea salt. You may need to scrape down the sides. Process until sticky but not too fine. Using a pie dish or spring form, press the crust mixture into the dish, making sure to create an even thickness. Set aside.
     
  2. Strawberry Cream Filling Layer - Drain and rinse cashews. In a high powered blender, blend together cashews, honey, lemon, coconut cream, vanilla, coconut oil, sea salt and strawberries. Blend until smooth and creamy. Pour the mixture into crust and place in freezer to set for one hour. Set aside about half cup of this strawberry cream filling to make the swirls later.
     
  3. Mango Layer - In a high powered blender, blend together cashews, honey, lemon, coconut cream, vanilla, coconut oil, sea salt and mangoes. Blend until smooth and creamy. Pour the mixture over the set strawberry filling. To create swirls on this top layer, pour the strawberry filling your previously set aside in blobs and use a chopstick to swirl the two different fillings around. Replace in the freezer for an hour to set.
     
  4. Once set, you can add your decoration. Keep stored in the freezer.
     
  5. Remove from freezer 10 minutes before serving.
