Soak the dates after removing the pits in hot water at least 10 minutes.
Add the soaked dates and 4 tbs. of the date water to a food processor and process on high until a thick paste.
Add sunflower seeds and process until combined and sunflower seeds are slightly broken down
Add chia seeds, protein powder, and cacao powder. Process until forms a thick dough.
Add 1 tbs. coconut flour and 1 tsp. vanilla extract. Process on high until combined. Check the consistency and add up to one more tablespoon of coconut flour depending on how big your dates were and how wet the batter is.
Remove the batter from the food processor and place in a 8X8 silicone baking sheet or a 8X8 baking sheet lined with parchment paper.
Press the batter down, making sure to fill out the corners and that everything is in one even layer. Place in fridge for 10 minutes.
Remove from fridge, remove from pan and cut into squares. Divide the squares with wax paper when storing. Top with optional drizzle of coconut butter.
