1. Rinse arugula, mushrooms, lime, and pomegranate.
2. Cut pomegranate in quarters and remove fleshy seeds from white rind into a bowl.
3. Slice tempeh into thin strips and then into small squares.
4. Slice mushrooms into thin slices.
5. Combine greens, mushrooms, tempeh, and pomegranate seeds into salad bowl.
6. Use a citrus squeezer to squeeze the juice of one lime on top.
7. Enjoy with your favorite salad dressing.
