Red Pepper & Goat Cheese Panini

4 medium slice Sourdough bread
1 medium pepper(s) Red bell pepper (roasted)
2 spray (about 1/3 second) Olive oil cooking spray
1/4 cup chopped Olives (jarred tapenade)
1/2 cup Goat cheese, semi-soft
1 cup Baby spinach


  1. Spread two slices of bread with olive tapenade (3-4 tablespoons each) and two slices of bread with goat cheese (3-4 tablespoons each).
  2. Top the tapenade pieces with the roasted peppers and a handful of spinach. Place the goat cheese slices on top.
  3. Grill on a panini press, high heat, for about 10 minutes, checking periodically to make sure it doesn’t burn OR Grill in a skillet. Flatten the sandwiches with a heavy frying pan while in the skillet to get the panini effect.
