Red Velvet Pumpkin Seed Protein Bars

2 beet(s) Beets, raw
1/2 cup Whey protein powder, vanilla
1/4 cup Coconut flour (or almond, quinoa or oat flour)
1/4 cup Coconut milk, sweetened (or almond milk)
1 tbsp Pumpkin seed butter (or peanut/almond butter)
1/4 cup Dark chocolate (melted)


Combine flour and protein powder.

Bind the powder and flour with milk and with nut butter too. Add enough liquid (and nut butter) to make the batter come together – like dough. The end goal here is to end up with a batter that you can roll and subsequently into bars using your hands.

Shape the batter above into different bars.

Melt chocolate, either in the microwave or using a double boiler method, and dunk the bars in chocolate to cover them.

You can also pour the chocolate on top of the bars if you don’t want to dunk them or using a combination of dunking and pouring chocolate on top.

Place the bars in the freezer for at least 30 minutes.
