2 tbsp Beets, raw (shredded)
1/8 tsp Black pepper (to taste)
1/2 cup Coconut milk
1/4 cup Coconut vinegar
2 tbsp Extra virgin olive oil
1 tbsp Oregano, dried
1 cup Red kidney beans, canned, drained
1/2 tsp Sea salt
2 tbsp Sun-dried tomatoes
1/8 small Yellow onion (chopped)


Place all the ingredients into a blender or food processor bowl, and blend for 30-45 seconds on high speed.

Pour this creamy dressing on your favourite salad.
