1/2 cup Walnuts
6 date(s) Dates (pitted)
1 tbsp Coconut oil (melted)
3/4 cup Cashew nuts, raw (soaked for 2 hours and then drained)
2/3 cup Maple syrup
1/2 cup Lemon juice (freshly squeezed)
1 whole lemon(s) Lemon peel (zest)
1/4 cup Coconut oil


Combine first 3 ingredients in a food processor and then press into a square baking dish.

Combine remaining ingredients in a food processor and pour over crust. Place in the freezer until firm. Eat from frozen as the coconut oil will start to liquefy at room temperature.
