1 cup Raisins, seedless (sultana)
1 cup Water (boiling)
2 beet(s) Beets, raw
2 large Carrots
1/2 cup hulled Sunflower seeds
10 leaf Mint, fresh
1/4 cup Orange juice (freshly squeezed)
1 tbsp Lemon juice
2 tbsp Honey
1/2 tsp Salt
2 tbsp Olive Oil, Extra Virgin


Place raisins and boiling water in a bowl to soak. After 5 minutes they will be plump and juicy.

Grate the beets and carrots by hand or in your food processor using the grater attachment.

In a small bowl, combine orange juice, lemon juice, honey, salt and oil to make dressing.

Drain water from raisins.

Combine raisins, beets and carrots in a bowl with dressing and mix gently.

Garnish with mint and sunflower seeds.
