1 1/2 cup Brown rice, medium-grain, dry
2 tbsp Extra virgin olive oil
1 can (15oz) Black beans, canned (drained and rinsed)
1 1/4 cup Diced tomatoes, canned (undrained)
1 pepper(s) Green chili pepper (also chile or chilli) (chopped)
1 medium pepper(s) Green bell pepper (diced)
1 small Yellow onion (diced)
3 clove(s) Garlic
2 cup Chicken broth (stock), low sodium
1 tsp Chili powder
1 tsp Cumin

Instructions


TO FREEZE AND COOK LATER:

Label a 1-gallon-sized plastic freezer bag.

Add all ingredients to your freezer bag.

Remove as much air as possible, seal, and freeze for up to three months.

TO COOK:

Thaw freezer meal.

Add contents of freezer bag to large skillet, pot, or saute pan.

Bring to boil and simmer covered for 15-20 minutes, stirring occasionally,
until rice is soft.

Serve with sour cream, salsa and guacamole, if desired.
