2 cup | Brown rice, medium-grain, cooked (any kind of leftover rice) |
1/3 cup | Nutritional yeast (optional for cheesy flavour (consider how the rice is seasoned)) |
1/4 cup | Almond flour/meal, Bob's Red Mill (or 2 eggs) |
1/2 tsp | Garlic powder |
1 dash | Salt and pepper (to taste) |
1 tsp | Extra virgin olive oil |
1. Combine rice, nutritional yeast, almond flour, garlic powder and salt and pepper in a bowl.
2. Using your hands, form the mixture into patties that are about 2 inches wide and 1/2 an inch thick.
3. Heat a thin layer of olive oil in a pan and cook the patties on medium-low heat, about 5 minutes on each side so they have a nice golden brown colour (be gentle they are delicate and know that the larger you make them, the easier they will fall apart on you).
4. Remove from pan, and place on a paper towel-lined plate to absorb excess oil.
Quick Tips:
You can add any leftover veggies that you have at hand such as carrots, broccolini, peppers, cauliflower or herbs such as parsley or cilantro to the mix for extra flavour.
