Rice Patties (using leftover rice)
Health Highlights
An easy way to utilize leftover rice as a tasty side or a salad topper. Plant-Based, Gluten-Free and No Added Sugar, makes this a win!

Ingredients

2 cup Brown rice, medium-grain, cooked (any kind of leftover rice)
1/3 cup Nutritional yeast (optional for cheesy flavour (consider how the rice is seasoned))
1/4 cup Almond flour/meal, Bob's Red Mill (or 2 eggs)
1/2 tsp Garlic powder
1 dash Salt and pepper (to taste)
1 tsp Extra virgin olive oil

Instructions

1. Combine rice, nutritional yeast, almond flour, garlic powder and salt and pepper in a bowl.
2. Using your hands, form the mixture into patties that are about 2 inches wide and 1/2 an inch thick.
3. Heat a thin layer of olive oil in a pan and cook the patties on medium-low heat, about 5 minutes on each side so they have a nice golden brown colour (be gentle they are delicate and know that the larger you make them, the easier they will fall apart on you).
4. Remove from pan, and place on a paper towel-lined plate to absorb excess oil.
