Roasted Beet Hummus

2 beet(s) Beets, raw
1 can (15oz) Chickpeas, canned, drained (drained and rinsed)
1/4 cup Tahini
1/4 cup Lemon juice
3 tbsp Extra virgin olive oil
3 clove(s) Garlic
1 1/2 tsp Sea Salt


Preheat oven to 400° F. Scrub beets with a vegetable brush under running water. Cut off top and bottom. Wrap beets in foil and roast until tender (about 1 hour). Let cool, then peel.

Add all ingredients to a blender or food processor. Purée until smooth. Serve with gluten/soy/dairy/corn/nut-free crackers and/or crudités.
