Roasted Beet Hummus

1 can (15oz) Chickpeas, canned, drained (drained and rinsed)
4 beet(s) Beets, raw
1 1/2 from 2 lemons Lemon juice
1 tbsp Lemon peel (zest)
4 clove(s) Garlic
1/2 tsp Himalayan sea salt
1/2 tsp Black pepper


Preheat oven to 400°F.

Wrap beets in tinfoil and roast for 20-30 minutes, or until a fork can easily pierce them.

Remove from oven, allow to cool slightly and then remove the skins, wearing rubber gloves to avoid staining.

Add all ingredients to food processor and process on high for 3-5 minutes. If hummus is too thick for your liking, add a little water or extra lemon juice to thin it out.

Add remaining salt and pepper to taste.
