6 cup | Broccoli florets (with 2" of stem remaining) |
2 tbsp | Extra virgin olive oil |
1/4 cup | Cranberries, dried |
1/2 tsp | Sea Salt |
1/4 cup | Pumpkin seeds (pepitas) (toasted) |
1. Preheat oven to 400°F.
2. In a mixing bowl, toss together the broccoli, oil, cranberries and salt.
3. Spread onto a baking sheet and bake for approximately 12-15 minutes.
4. Return to mixing bowl and toss with toasted pumpkin seeds. Serve warm or at room temperature.
Toast pumpkin seeds:
Most dried cranberries are sweetened with refined sugar. Look for those which specify they are fruit juice or maple syrup sweetened.
