Ingredients


6 cup Broccoli florets (with 2" of stem remaining)
2 tbsp Extra virgin olive oil
1/4 cup Cranberries, dried
1/2 tsp Sea Salt
1/4 cup Pumpkin seeds (pepitas) (toasted)

Instructions


1. Preheat oven to 400°F.

2. In a mixing bowl, toss together the broccoli, oil, cranberries and salt.

3. Spread onto a baking sheet and bake for approximately 12-15 minutes.

4. Return to mixing bowl and toss with toasted pumpkin seeds. Serve warm or at room temperature.


Toast pumpkin seeds:

  • Preheat oven to 300°F
  • Toast seeds for 8-10 minutes or until slightly browned and puffed up.
  • Listen for the sound of the seeds popping because it doesn't take long for them to go from toasted to burned.

Notes:

Most dried cranberries are sweetened with refined sugar. Look for those which specify they are fruit juice or maple syrup sweetened.
