Ingredients


1 large head Cauliflower (chopped into florets)
2 tbsp Coconut oil
2 tsp Turmeric, powder (Option: YourSuper Golden Yellow)
1 dash Salt and pepper (to taste)
4 cup Mustard greens (Any leafy salad greens)
1 can (15oz) Chickpeas, canned, drained (rinsed)
1 cup Carrots (shredded)
1/2 cup Radish (sliced)
2 serving(s) Lemon Garlic Dressing

Lemon Garlic Dressing

3 1/8 tbsp Extra virgin olive oil
3/4 medium Lemon (juiced)
1/3 tsp Garlic powder
1 pinch Sea Salt (to taste)
1 dash Black pepper (to taste)

Instructions


  1. Preheat oven to 400 degrees F. Add cauliflower florets to a large bowl. Coat with coconut oil, turmeric, sea salt, and black pepper. Mix well and layer onto a baking sheet. Bake for 20 minutes, then turn over. Bake for another 10 to 15 minutes until golden brown. Remove from the oven and set aside to cool.
  2. To assemble the bowl, divide the ingredients into bowls: mixed greens, chickpeas, carrots, and radishes. Top with warm or cold cauliflower and dressing of choice

Instructions for "Lemon Garlic Dressing"

Add all the ingredients to a small bowl. Mix well. Store in an airtight container for up to 7 days.
