Roasted Cauliflower with Capers

1 medium head Cauliflower
3 tbsp drained Capers, canned
2 tbsp Lemon juice
3 tbsp Parmesan cheese, grated, low fat (or nutritional yeast for non dairy option)
1 pinch Sea salt
1 dash Black pepper


1. Preheat oven to 350. Cut cauliflower into florets.

2. On roasting sheet, add cauliflower, capers and mix with oil, lemon juice and parmesan cheese. Reserve 1 tbsp of parmesan.

3. Bake for 20 mins and add remaining parmesan before serving.

4. Add salt and pepper to taste.
