Instructions
Preheat oven to 450° F.
Place water in a small bowl and add raisins to plump and rehydrate.
In a large bowl, whisk together the ghee, balsamic, salt and pepper. Add cauliflower and toss well to combine. Place cauliflower on a cookie sheet and roast for 15 minutes.
Drain water from raisins and add to cauliflower and cook 5 minutes more, or until cauliflower is tender. It should have a nice golden color. Serve warm.
Note:
Roasting cauliflower brings out a sweet, nutty flavor. Keep an eye on the raisins so they caramelize but don't burn.
