2 tbsp | Extra virgin olive oil |
Preheat oven to 350°F (175°C). Mix all ingredients except chicken in a small bowl.
Put chicken, minus neck and giblets, in a roasting pan.
Starting at the neck cavity, loosen the skin from breast, drumsticks and thighs of chicken by inserting fingers and gently pushing between skin and meat.
Rub seasoning mix under loosened skin with fingers. (This is a bit messy but worth it. The meat, not the skin, is seasoned, and the skin keeps the meat from drying out in the oven)
Bake for approx. 1 1/2 hours.
Remove skin and serve.
