Dry chickpeas really well. Throw them in a tea towel and rub them dry - also rubbing off a lot of the skins (which pop off really easily).
Place on a baking sheet and bake at 400° F for 15 minutes or so. Remove from oven. Add the oil and spices of your choice, mix well then return to the oven for an additional 15 - 20 minutes. Stir regularly. Cool.
Spice combinations:
Cinnamon Combo: 2 - 3 Tbsp coconut or brown sugar + 1-2 tsp cinnamon
Chili Combo: 1 tsp chili powder + 1 tsp salt + 1/2 tsp cumin
Tip: Eat within one day for the crunchiest chickpea snack.
