Roasted Garlic Shrimp

454 gm Shrimp, raw (peeled and deveined)
2 tbsp Olive Oil, Extra Virgin
4 clove(s) Garlic (minced)
1/2 tsp Oregano, dried
1/2 tsp, leaves Basil, dried
1/4 cup Parmesan cheese, grated (or nutritional yeast if dairy-free)
1 pinch Sea Salt
1 dash Black pepper
3 tbsp Lemon juice
2 tbsp Parsley, fresh (chopped, for garnish)


  1. Preheat oven to 400F (200C). Lightly oil baking sheet.
  2. Place shrimp in a single layer on the baking sheet. Drizzle over with olive oil and sprinkle garlic, oregano, basil, and Parmesan. Season with salt and pepper. Gently toss to combine. 
  3. Place in oven and roast until pink and cooked through, around 6 - 8 minutes. Once cooked through, remove from the oven and squeeze lemon over. 
  4. Serve immediately, garnished with parsley


Serve with
  • Sautéed vegetables - bell peppers, green beans, or a mixed green salad with balsamic dressing!
