1 1/2 medium Rutabaga, Swedish turnip, raw
3 tbsp Extra virgin olive oil
1 dash Salt and pepper
1/2 tsp Apple cider vinegar
2 tsp Parsley, Italian, fresh (chopped)

Instructions


Toss 1 rutabaga peeled and cubed rutabaga with 3 tablespoons olive oil, and salt and pepper on a baking sheet.

Roast at 425 degrees F until golden and soft, 40 minutes. Toss with 1/2 teaspoon apple cider vinegar and chopped parsley.
