227 gm | Strawberries (halved) |
1 tbsp | Coconut oil (melted) |
1/3 cup | Rolled oats- Gluten Free |
2 tsp | Chia seeds |
1/3 cup | Silk Original Coconut Milk (or preferred nut milk) |
1/3 cup | Yoso Plain Unsweetened Coconut Yogurt |
1 tsp | Vanilla extract, pure |
1 pinch | Salt |
2 tbsp | Mint, fresh (chopped) |
1 tbsp | Walnuts (toasted and chopped, optional) |
1. Preheat oven to 350°F.
2. Mix strawberries and melted oil in a roasting pan. Place in oven for 15 minutes. Remove and let cool.
3. Combine oats and chia seeds. Stir in coconut milk, coconut yogurt, and vanilla. Stir in half of the strawberries, cover with lid and leave on counter overnight.
4. Serve with remaining strawberries and fresh mint, if desired.
