227 gm Strawberries (halved)
1 tbsp Coconut oil (melted)
1/3 cup Rolled oats- Gluten Free
2 tsp Chia seeds
1/3 cup Silk Original Coconut Milk (or preferred nut milk)
1/3 cup Yoso Plain Unsweetened Coconut Yogurt
1 tsp Vanilla extract, pure
1 pinch Salt
2 tbsp Mint, fresh (chopped)
1 tbsp Walnuts (toasted and chopped, optional)

Instructions


1. Preheat oven to 350°F.

2. Mix strawberries and melted oil in a roasting pan. Place in oven for 15 minutes. Remove and let cool.

3. Combine oats and chia seeds. Stir in coconut milk, coconut yogurt, and vanilla. Stir in half of the strawberries, cover with lid and leave on counter overnight.

4. Serve with remaining strawberries and fresh mint, if desired.

Notes:

Chia Seeds

are high in protein and Omega 3 fatty acids!

are a great source of vitamin C
