1 tbsp Extra virgin olive oil
1 cup White mushrooms
1 medium Zucchini (cut into thick slices)
1 cup Cherry Tomatoes (halved)
1/2 medium Red onion (sliced)
1 clove(s) Garlic (minced)
1 medium pepper(s) Yellow bell pepper (sliced)
2 cutlet (4oz) Chicken breast cutlets
4 tbsp Balsamic vinegar (divided)
1 tsp Italian herb seasoning, McCormick
1 tbsp Basil, fresh
1 dash Salt and pepper
2 medium tortilla(s) Whole wheat tortilla

Instructions


  1. Preheat the oven to 400°F.
  2. Place all the vegetables on a baking sheet and toss with olive oil, 2 tbsp balsamic vinegar, and ½ tsp Italian seasoning, salt and pepper.
  3. In a bowl, toss the chicken breast with 2 tbsp balsamic vinegar, ½ tsp Italian seasoning, and the basil.
  4. Place the chicken on the same or a separate baking sheet. Place everything in the oven and roast for 20 minutes. Remove from oven and let cool slightly.
  5. Once cooled, sliced chicken and assemble wraps with roasted vegetables!
