The most wonderful thing about winter may be warming up with roots.
Ingredients
5 potato
Potato
4 large
Carrots
1 medium
Yellow onion
(diced small)
1 cup
Green lentils, raw
5 clove(s)
Garlic
(fresh, diced or substitute with dried)
1 tbsp
Italian herb seasoning
(chopped.Fresh is best but dried will work. Choose fresh herbs you have on hand or use a prepared Italian seasoning. These herbs work well: thyme rosemary oregano basil)
2 tsp
Salt
7 cup
Water
1/2 tsp
Black pepper
(generous twists of ground)
Instructions
1. Wash fresh vegetables.
2. Use a sharp knife to remove any bad spots from veggies.
3. Chop potatoes and carrots into large chunks.
4. Dice onion and garlic into small pieces.
5. HEAT—Crockpot: Add all ingredients to crockpot and cook on high for 5 hours. Stovetop: Add all ingredients to large covered pot. Cook on medium heat for about 30 minutes or longer until potatoes and carrots are soft and lentils are partly dissolved into the soup's broth.
