This easy low carb Rosemary Pecan Chicken Salad with Champagne grapes on Zucchini Chips, is slightly addictive, but oh so healthy and delicious!
Ingredients

Chicken breast, roasted
(pre-cooked; chopped)
1/4 cup
Red grape
1/4 cup
Pecans
(chopped)
1/4 cup
Red cabbage
(finely chopped purple)
2 tbsp
Yoso Plain Unsweetened Coconut Yogurt
2 tsp
Mayonnaise, with avocado oil
1 tsp
Rosemary, fresh
(finely chopped)
pinch
Salt and pepper
(ground; to taste)
1/2 medium
Zucchini
1/2 medium
Summer squash
(yellow)
Instructions
Make the chicken salad by combining the chopped chicken, grapes, pecans, yogurt, mayonnaise, and rosemary in a medium mixing bowl. Season to taste with salt and pepper.
Slice zucchini and summer squash in to ~1/4 inch rounds-you will have ~20 rounds or "chips". Place squash chips on a serving dish and top with chicken salad. Serve immediately, or store in refrigerator until ready to serve.
