Rutabaga Fritters with Avocado

454 gm Rutabaga, Swedish turnip, raw
227 gm Halloumi cheese, Wegman's
4 medium Egg
3 tbsp Coconut flour
1 dash Turmeric, powder
1 tsp Salt
1/4 tsp Black pepper
114 gm Butter, unsalted
1 cup Mayonnaise
1 tbsp Ranch seasoning, dry, McCormick
4 avocado(s) Avocado
150 gm Spinach


Rinse and peel the rutabaga. Grate coarsely with a grater or in a food processor. Shred the cheese the same way.

Mix cheese and rutabaga with the other ingredients in a bowl. Let sit for a few minutes.

Form 12 patties with your hands or just place directly, using a big spoon, in a frying pan with a generous amount of butter.

Fry on medium high. Turn the patties after a few minutes. Perhaps lower the heat towards the end. Keep hot.

Combine mayonnaise and ranch dressing.

Serve with a spinach , sliced avocado and a dollop of Ranch flavoured mayonnaise.

Tip: Instead of avocado, try serving fritters with smoked salmon and a tablespoon of mayonnaise
