2 tsp Apple cider vinegar
1 tsp Baking powder
3 medium Banana (s) (roughly mashed)
2 tsp Cinnamon
1/4 cup Coconut flour
5 tbsp Coconut oil
1/4 cup pitted Dates
3 medium Egg (beaten)
2 1/2 tbsp Maple syrup
1/4 cup Rye flour, medium
1/2 tsp Sea Salt
1 tsp Vanilla extract, pure


Preheat the oven to 180°C/ 350°F.

Line a small to medium bread tin with parchment paper.

Get two large bowls ready, one for the dry and one for the wet ingredients.

In the first bowl stir the flours, dates, cinnamon, baking powder and salt together.

In the second bowl beat the eggs until foamy, add the remaining wet ingredients and blend well.

Combine the two mixtures by adding the wet on top of the dry mix and beat with a balloon whisk.

Transfer the dough into the lined loaf tin. If there is some banana left, slice it up and use them to decorate the loaf.

Bake it in the oven for 40 minutes and cool on a wire rack.

Serve and enjoy!
