1/8 tsp Black pepper (to taste)
4 thigh(s) Chicken thighs, boneless, skinless (boneless, diced)
1 clove(s) Garlic (crushed)
1 medium Lemon
3 tbsp Olive oil
4 medium Tomato (peeled and cubed)
1/8 tsp Saffron
1/8 tsp Salt (to taste)
1 medium pepper(s) Green bell pepper (diced)
2 cup White rice, medium-grain, dry
1 medium Yellow onion (diced)


Place oil in saucepan; cook meat in hot oil until golden brown.

Add onion, pepper, salt, tomatoes, green pepper and garlic and reduce heat to medium temperature.

After vegetables appear tender crisp, add salt, rice and a little water as needed. Simmer until rice is cooked, remembering to add saffron and stir occasionally while cooking.

Serve with 1/2 lemon per person to squeeze over each serving.
