Grilled Chicken Salad in a Jar

Pack the salad in a jar and fill with delicious salmon or chicken and dressing for a quick keto lunch. Both handy and delicious!

Ingredients


114 gm Chicken breast, boneless, skinless, grilled
30 gm Lettuce, spring mix (mesclun)
30 gm Cherry Tomatoes
30 gm Red bell pepper
30 gm Cucumber
1/2 green onion (stem) Green onion
4 tsp Balsamic vinegar
2 tsp Extra virgin olive oil
1/4 tsp Garlic powder
1/4 tsp Brown mustard

Instructions


  1. Shred or chop vegetables. First, put dark leafy greens such as spinach or arugula at the bottom of the jar. Add green and red cabbage for a fresh crunch.
  2. Add sliced onion rings, shredded carrot, avocado, peppers and tomato in layers.
  3. Top grilled chicken. 
  4. Add dressing right before serving.

Advanced Preparation

1 day prior, Balsamic vinegar 4 tsp
Instructions:

Place balsamic vinegar and remaining ingredients together in a small container, shake vigorously. Alternately, you may multiply the recipe to have some on hand for future use.
