1 cup Basmati rice, dry
1 3/4 cup Water
454 gm Pacific salmon, fillets, raw (cut into 4 fillets)
114 gm Sugar snap peas
1/2 cup Green onion (cut into 1 inch pieces)
1 tbsp Honey
2 tbsp Soy sauce, low sodium
1 tbsp Ginger root (grated)

Instructions


  1. Rinse rice under cool water. Combine with water in a medium saucepan.
  2. Bring to a boil over medium-high heat. Reduce to a simmer, and cover for 10 minutes.
  3. Remove lid and place salmon fillets over rice.
  4. Cover and cook for 6 minutes, then remove the lid again and add snap peas and scallions. Cover and cook for 3 more minutes.
  5. Meanwhile, combine honey, soy sauce, and ginger in a small bowl.
  6. Remove rice and salmon from heat, drizzle with soy sauce mixture, and serve immediately.
