(skin removed, flesh cut into pieces)

(cooked and chopped)

(thick slice to serve)

Instructions
Heat the oil in a frying pan over a medium heat. Add the onion and garlic and stir-fry for 2-3 minutes, or until softened.
Add the salt cod pieces and stir for 2 minutes, or until opaque.
Add the remaining ingredients, stir well and bring the mixture to a simmer. Simmer for 6-8 minutes, or until the sauce has thickened slightly.
To serve, spoon the salt cod and tomato stew into a serving bowl. Serve the thick whole wheat bread alongside.
