397 gm Turkey sausage, lean
10 1/2 large Egg
1 cup Goat cheese, semi-soft (crumbled)
7 cup Baby spinach
7 medium tortilla(s) Tortilla, gluten-free (brown rice tortillas)

Instructions


  1. Heat a cast-iron skillet over medium heat and add the sausage. Using the back of a spoon, crumble the sausage. Cook, stirring occasionally until cooked through, about 8 to 10 minutes. Remove the sausage and set it aside.
  2. In a small bowl, whisk the eggs. 
  3. In the same skillet, lower the heat to medium-low. Add the eggs and cook until still somewhat soft, and cooked through. 
  4. Remove from the heat and add the cheese, spinach, and the reserved sausage and stir to combine. 
  5. In a clean skillet, add the wrap, and then add half the sausage and egg filling to one-half. Fold the tortilla in half and gently press down. 
  6. Cook for two to three minutes per side or until browned and crispy. Let the quesadilla cool slightly and then cut into wedges.
  7. Enjoy!
