1 medium Yellow onion
2 tbsp Avocado oil
2 package (10oz) Frozen spinach (thawed slightly ahead of time)
2 clove(s) Garlic (minced)
3 large egg Egg
1 tsp Sea salt (or to taste)
1/2 tsp Black pepper (or to taste)


1. Fry onion until it is transparent.
2. Add the spinach, and cook over medium heat for another 15-20 minutes, stirring regularly and being careful not to burn.
3. Season with salt and pepper, to taste.
4. Crack the the eggs into the pot one at a time and stir into the spinach mixture, cooing for another 2 minutes.
5. Remove from the heat and serve immediately.
