This healthy side is the perfect option for serving with meat or salmon dishes.
Ingredients

Garlic
(smashed)
5 tomato
Plum tomatoes
(diced)
1 medium
Zucchini
(cut up)
2 tbsp
Extra virgin olive oil
1 dash
Salt and pepper
1/2 tsp
Herbes de provence
Instructions
Heat a large non-stick pan over medium-high heat.
Prepare your garlic, tomatoes and zucchini according to ingredient instructions.
Add olive oil to your warm pan and let it heat for 15 seconds. Add garlic and sauté until golden. Add zucchini, salt and pepper. Cook about 4-5 minutes on each side, then add tomatoes and season with additional salt and herbes de Provence. Lower heat and simmer about 5-10 minutes.
Divide into equal portions when serving. Serve immediately.
Notes:
This recipe would also work nicely with mushrooms, peppers, swiss chard or kale.
