3 tbsp Canola oil (Hill Country Fare)
2 breast Chicken breast, boneless, skinless (thinly sliced)
2 cup White onion (chopped)
2 cup Carrots (peeled and chopped)
2 cup Celery (chopped)
4 clove (s) H-E-B Peeled Garlic Cloves (chopped)
908 gm Chicken broth (stock), low sodium (Central Market)
6 cup Water
2 cup Lentils, canned
2 cup Monterey jack cheese (Hill Country Fare, shredded)

Instructions


  1. Heat a large soup pot over medium heat for 2 minutes.
  2. Add canola oil, chicken and onion to hot soup pot and stir-fry for 3 minutes or until onion is golden.
  3. Add chopped carrots, celery and garlic and continue to stir-fry for 3 minutes.
  4. Add chicken broth, water, and lentils. Bring to boil over high heat, reduce heat to medium low, cover and cook for 1 1/2 hours or until lentils are tender.
  5. Top each bowl of soup with 1/4 cup of shredded cheese.
