1 cup Chickpea flour (Basen)
1/4 cup Shallots
1/4 cup Zucchini
1 cup Baby spinach
1 tbsp Ghee (can be replaced with coconut oil, grapeseed oil)
1 tbsp Lemon juice (or as per taste, can be replaced with lemon zest and apple cider vinegar)
1 tsp Sea Salt (as per taste)
1 tsp Ginger-garlic paste (optional)
1/4 cup Cilantro (coriander) (can be replaced with other fresh or dried herb)
1 tsp, minced Green chili pepper (also chile or chilli) (can be replaced with red chilli powder or jalepan'eo)
1/4 tsp Turmeric, powder
1/2 tsp Cumin seeds (ground)
1/4 tsp Asafoetida powder (optional)

Instructions


Instructions:

  1. In a mixing bowl, combine chickpea flour, vegetables, green chilies, turmeric, cumin seeds, ginger-garlic paste, salt, and coriander leaves. Alternatively this blended to a smooth batter similar to a pancake batter. (Add water as needed)
  2. Heat a non-stick pan or griddle over medium heat and lightly grease with ghee or oil.
  3. Pour a ladleful of batter and spread it into a thin circle.
  4. Cook for 2-3 minutes on each side until golden brown and crisp.
  5. Serve hot with a side of green chutney, flax seed chutney, kimchi or dairy yogurt or plant based yogurt.
