4 1/5 second spray Cooking Spray, canola oil
2 large Egg
1 large tortilla(s) Wheat flour tortilla (white flour)
1 tbsp Green bell pepper (diced)
1 tbsp Red bell pepper (diced)
1 tbsp Red onion (diced)
2 tbsp Salsa verde, ready to serve

Instructions


  1. Coat a non-stick skillet with cooking spray and warm over medium heat.
  2. Add the diced peppers and onion and saute for 5 minutes.
  3. Crack the eggs into the pan and scramble them with the cooked peppers and onions.
  4. Place egg mixture in the tortilla, top with salsa verde, roll up, and enjoy!
