Secret-Ingredient Mint Fudge

This Easy Mint Fudge Recipe is naturally colored with a secret ingredient and loaded with healthy ingredients, plus it's dairy and sugar free too.


1 1/2 cup Coconut oil ((use expeller-pressed if you wish to avoid coconutty flavor))
1 1/4 cup Pumpkin seed butter (or any nut or seed butter; gives green colour)
8 tbsp Swerve Sweetener, granular (1/2 cup, or any equivalent sweetener to taste; reduce the amount if using stevia extract.)
8 tbsp Parsley, dried (1/2 cup, or more; gives green colour)
2 tsp Vanilla extract, pure
1 tsp Peppermint extract
1 dash Sea Salt
1/4 cup Dark chocolate (sugar free; optional; for drizzle)


  1. Melt coconut oil in small saucepan. Add remaining ingredients to blender, add coconut oil and blend until smooth.
  2. Pour into an 8x8 baking pan and freeze until solid (about 2 hours).
  3. Store in refrigerator to prevent softening.
