2 cup shredded Red cabbage
2 cup shredded Cabbage, savoy
2 cup grated Carrots
1/4 cup Pumpkin seeds (pepitas)
2 tbsp Sesame seeds, black
2 tbsp Sesame seeds
2 tbsp Sunflower seeds
2 tbsp Poppy seeds
1/4 cup Parsley, fresh (chopped)
1/4 cup Olive Oil, Extra Virgin
1 clove(s) Garlic (crushed)
1/2 tsp Cumin
1/2 tsp Salt
2 tbsp Lemon juice


Combine oil, garlic, cumin, salt and lemon juice in a blender to make dressing.

Mix cabbage, carrots, seeds and parsley together in a bowl. Pour dressing over salad and todd together.

Tip: Add grated beetroot for some extra colour and an earthy flavour.
