Shaved Brussels Sprouts Salad

454 gm Brussels sprouts (discoloured or tough outer leaves discarded)
1 large shallot(s) Shallots (minced)
2 from 2 lemons Lemon juice
2 of 2 lemons Lemon peel (zest)
3/4 cup Parmesan cheese, grated (or pecorino cheese)
1/2 cup Mint, fresh
1 pinch Salt
1 dash Black pepper (to taste)
4 tbsp Extra virgin olive oil (3-4 tbsp.)
1 tbsp Pine nuts, dried
1 tbsp Sesame seeds


Holding each Brussels sprout by the stem end, cut into very thin slices using a mandoline. Toss in a large bowl with shallot, lemon zest, shredded cheese, mint leaves, salt, and pepper. Add lemon juice and olive oil and toss to coat. Serve topped with pine nuts and sesame seeds.

Serves 6-8.
