Mini Meatloaf with Potatoes & Green Beans

Ingredients


12 potato Red mini potato
1 tbsp Extra virgin olive oil
1 pinch Kosher salt
1 dash Black pepper
2 clove(s) Garlic (minced)
1/2 cup Yellow onion (chopped)
2/3 cup Bread crumbs, whole wheat
3 tbsp Tomato ketchup
454 gm Beef, ground, extra lean
1 medium Egg
1/2 tbsp Horseradish, prepared (optional)
1/2 tbsp Dijon mustard
1/2 tsp Oregano, dried
2 tbsp Parsley, fresh (or dried)
1/4 tsp Salt
1 dash Black pepper
1/3 cup, diced Cheddar cheese (diced into cubes)
4 tsp Tomato ketchup
2 cup Green/yellow string beans, raw
1 tbsp Extra virgin olive oil
1 pinch Salt
1 dash Black pepper

Instructions


  1. Preheat oven to 400°F (200°C).  Line a 12 x 17-inch sheet pan with aluminum foil and spray with cooking spray.
  2. Place potatoes on the bottom half of the pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss to combine.
  3. In a medium skillet over medium heat, saute garlic and onion for 2 minutes. Place into a large bowl.
  4. Combine onion mixture, breadcrumbs, ketchup, ground beef, egg, horseradish (optional), Dijon mustard, oregano, parsley, salt, and pepper and mix well.
  5. If cooking for 4, shape the mixture into 8 loaves or adjust accordingly depending on the number of people you are cooking for. 
  6. Place a couple of cubes of cheese into each meatloaf and wrap tightly making sure none of the cheese is exposed.
  7. Place the mini meatloaves onto the upper half of the sheet pan and top each meatloaf with about 1/2 teaspoon of ketchup. 
  8. In a medium bowl, toss the green beans with olive oil, salt, and pepper, then place them in between the meatloaves and potatoes.
  9. Place the sheet pan in the oven and Bake for 20-25 minutes, or until the internal temperature of the meatloaves reaches 161° F (72° C).
