Instructions
- Preheat oven to 400°F (200°C). Line a 12 x 17-inch sheet pan with aluminum foil and spray with cooking spray.
- Place potatoes on the bottom half of the pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss to combine.
- In a medium skillet over medium heat, saute garlic and onion for 2 minutes. Place into a large bowl.
- Combine onion mixture, breadcrumbs, ketchup, ground beef, egg, horseradish (optional), Dijon mustard, oregano, parsley, salt, and pepper and mix well.
- If cooking for 4, shape the mixture into 8 loaves or adjust accordingly depending on the number of people you are cooking for.
- Place a couple of cubes of cheese into each meatloaf and wrap tightly making sure none of the cheese is exposed.
- Place the mini meatloaves onto the upper half of the sheet pan and top each meatloaf with about 1/2 teaspoon of ketchup.
- In a medium bowl, toss the green beans with olive oil, salt, and pepper, then place them in between the meatloaves and potatoes.
- Place the sheet pan in the oven and Bake for 20-25 minutes, or until the internal temperature of the meatloaves reaches 161° F (72° C).
