Shish tawook are Middle Eastern chicken kabobs. Make them at home by marinating chicken in yogurt, lemon, and spices; skewer with veggies and grill.

Red onion
(cut into large chunks)
1 large pepper(s)
Green bell pepper
(cut into large chunks)

Parsley, Italian, fresh

Instructions
Marinate the Chicken: In a large bowl, whisk together the yogurt, lemon juice, olive oil, garlic, tomato paste, salt, oregano, black pepper, allspice, cinnamon, and cardamom.Add the chicken pieces and toss until fully coated. Transfer the mixture to a resealable plastic bag, squeeze out the excess air, and seal. Refrigerate and marinate for at least 4 hours.
Prep the Grill: Preheat an outdoor grill to medium-high heat. Lightly oil the grates to prevent sticking.
Assemble the Skewers: Thread the marinated chicken, onion pieces, and bell pepper chunks onto metal skewers, alternating for color and flavor.
Grill: Place the skewers on the preheated grill and cook for about 5 minutes per side, or until the chicken is golden and cooked through (internal temperature should reach 165°F / 74°C).
Serve: Remove skewers from the grill and sprinkle with chopped fresh parsley before serving.
