2 tbsp Vegetable oil
2 breast Chicken breast, boneless, skinless (fillets)
341 gm Beer (5% alcohol)
2 whole lime(s) Lime juice (fresh) (divided)
1 tbsp Tomato paste, canned
1 1/2 cup Chickpeas, canned, drained
1 tsp Cumin
1/2 tsp Chili powder
12 small tortilla(s) Tortilla, corn
1 avocado(s) Avocado (large, sliced)
1 mango Mango (sliced)
1 cup Napa cabbage, raw (shredded)

Instructions


  1. Heat oil in a nonstick skillet on medium-high. Brown chicken thoroughly on both sides.
  2. Add in beer, half of the lime juice and tomato paste. Mix to combine. Bring liquid to a simmer then cover. Lower heat slightly. Let chicken simmer until it is easily shredded with a fork.
  3. Meanwhile, drain chickpeas, reserving the liquid, and place in food processor or blender. Add ¼ of the liquid back to the food processor along with cumin and chili powder. Pulse until chickpeas are mashed but not completely smooth.
  4. Scrape chickpeas into a microwave safe dish. Heat for 2 minutes or just until heated through.
  5. Wrap the tortillas in a damp paper towel and heat gently in microwave. To build the tacos, spread a generous amount of chickpea mixture on the taco. Add shredded chicken, avocado, sliced mango, cabbage and a drizzle of lime juice.
