1 cup Baby spinach
1/2 cup Cucumber (diced)
1/4 cup Red onion (diced)
1 spray (about 1/3 second) Olive oil cooking spray
1/2 whole lemon(s) Lemon juice
1 pinch Kosher salt (to taste)
1 tsp Sriracha (optional)

  1. Cook the Shrimp:

    • Heat olive oil in a large skillet over medium-high heat.
    • Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Season lightly with salt and pepper. Remove shrimp from the skillet and set aside.
  2. Assemble the Bowl:

    • In a bowl, combine cooked brown rice, baby spinach, diced cucumber, and diced red onion.
  3. Add Shrimp:

    • Top the rice and vegetable mixture with the cooked shrimp.

    • Drizzle with Lemon Juice:

      • Squeeze the juice of half a lemon over the bowl for a fresh citrus flavor.
    • Optional: Add Heat (Sriracha or Hot Sauce):

      • If desired, drizzle with Sriracha or your favorite hot sauce for extra flavor.
