1 kg Shrimp, cooked (peeled and deveined)
1/2 cup Cilantro (coriander)
1/2 cup Parsley, fresh
1/2 pouch (19 gm) Italian dressing, dry mix
1 tbsp Extra virgin olive oil
199 gm Sweet Potato Glass Noodles
1 medium Lemon
2 cup Summer squash (choppped)
1 cup chopped Sweet onion
2 cup Roma tomatoes (sliced)
2 cup Zucchini (chopped)

Instructions


  1. De-vein and wash shrimp. Set aside.
  2. Add olive oil to a pan with diced vegetables.
  3. Cook 80 percent of the way, then add the shrimp as well as ½ c diced cilantro and ½ c diced parsley and juice of one full lemon.
  4. Sprinkle ½ to full packet of Italian dressing mix to the pan, stir one minute.
  5. Make noodles- mix in or serve on top.
