8 medium Apple (cored and cut into eighths ** - can also use pears)
1 cup Frozen berries (optional - I've used raspberries and blackberries)
3 tsp Cinnamon (or according to taste)
1 tsp Nutmeg, ground
1 tsp Vanilla extract, pure (optional)
1 pinch Sea Salt
1 tbsp Coconut oil (for griddle)
1 tsp Cinnamon (for griddle)
1 tsp Maple syrup, pure (for griddle - can use honey or natural sweetener)

Instructions


Fill a medium large saucepan half way up with water and put on high heat.

Add the apples (and berries if you choose to at this point), cinnamon, nutmeg, vanilla essence and sea salt. If the water doesn’t cover the apples, add a enough to cover them.

Place the lid on (I do this at a slight angle to avoid over boiling), bring to the boil and then turn down to a low/medium heat (the water should still be bubbling slightly).

Cook apples until a fork can go through them easily, then remove all but about a cup of the water (You can drink this – I usually do!).

Place back on the stove on a medium heat, and cook until the water is mostly evaporated and the mixture has reached a thicker consistency (will take longer with berries).

Remove from heat. Preheat a frying pan or griddle on a medium heat and grease with a tbsp of coconut oil.

Take a cup of the apple mixture and place on griddle, along with an extra tsp of cinnamon and a drizzle of maple syrup (if that is what you decide). Fry for 2-4 minutes, allowing the cinnamon and maple to mix through and the apples to caramelize slightly.

Repeat step 7 to have more fried apples, or place the remainder in the fridge to use for later.

** Note: if you dislike the texture of the peel, then also peel them – I leave it on for added fibre. Pears add extra sweetness.
