57 gm Breakfast sausage, mild (choose a brand you like - use your CTC knowledge)
1 tbsp Butter, grass fed, unsalted
2 large Egg
2 tortilla Siete Almond Flour Tortilla (25g = 1 tortilla)
57 gm Cheddar cheese (shredded)

Instructions


  1. COOK THE SAUSAGE: Preheat cast iron skillet over MEDIUM heat. Form the sausage into 2 thin patties, and place into heated skillet. Cook until lightly browned and internal temperature reaches 165F. Remove from skillet and set aside. 
  2. COOK THE EGGS: Reduce heat to MEDIUM-LOW. Scrape the bottom of the skillet and wipe with a paper towel. Melt the butter in the skillet. Once butter is melted, add eggs. Break the yoke with a spatula, and add salt and pepper to taste. Flip when the tops still look wet and cook until the egg is no longer runny. Remove from skillet and set aside.
  3. PREPARE THE TORTILLAS: Wipe out the skillet with a paper towel. Divide the shredded cheese among 2 tortillas. Place the tortillas in the skillet just until the cheese is melted. Add the sausage and eggs, divided evenly between the 2 tortillas. Using a spatula, gently fold each in half like a taco, and gently press. 
  4. SERVE: Remove from skillet and enjoy! You might enjoy it with some greens, mustard, or berries.
